This is my first time duing my MENU PLAN SUNDAY. I wanted to provide a place for people to get new ideas for dinners and have the recipes. I hope you enjoy.
And if you have suggestions that would be awsome. Send them on over and I will post them.
MON~ Pizza (This is hubbys only full day off during the week so we usually get something fun like pizza and play games)
TUE~ Pulled BBQ beef sandwhiches (crock-pot night due to boys scouts)
1- boneless beef chuck roast
1-1/2 C ketchup
1/4 C packed brown sugar
1/4 C BBQ sauce
2 tbl worchestershire sauce
2 tbl dijon mustard (I used regular mustard)
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp pepper
Hamburger buns
Sliced onions, pickles and jalapenos optional
Place roast in slow cooker. combine ketchup, brown sugar, bbq sauce, worchestershire, mustard and seasonings. Poor over beef.
Cover and cook 8-10 hours or until meat is tender. Shred beef with fork and return to slow cooker. Cover and cook for 15 min. Dress up bun as desired and enjoy.
WED~ Homemade Mac-n-Cheese
3 C uncooked elbow pasta
1 lb process cheese (vleveeta) cubed
2 C (8oz) shredded mexican cheese blend
2 C (8oz) shredded white cheddar cheese
1-3/4 C milk
1 can evaporated milk
1 egg, beaten
3/3 C butter, melted
Cook macaroni according to package, drain, Place in greased slow cooker. Stir in remainnig ing.
Cover and cook 2-3 hours.
THU~ Ribs with baked beans
1-1/2 C tomato juice
1/2 C maple syrup
1/4 C chopped onion
3 tbl cider vinegar
1 tbs worchestershire sauce
1 tbl dijon mustard (I use regular mustard)
2 tsp minced garlic
1/4 tsp ground cinnamon
4 lbs ribs
1 tsp pepper
1 tbl cornstarch
2 tbl cold water
In a small bowl combine the first 9 ing. set asie. Cut ribs into servinng-size pieces; place on a broiler pan, sprinkle with pepper.
Broil 4-6 inch from heat 3-5 min. on eah side.
Place ribs in slow cooker; top with tomato juice mixture.
Cover and cook 6-7 hours or until meat is tender.
In small bowl combine corstarchand cold water until smooth. Pour 1 C cooking liquid into a small saucepan; skim off fat. Bring to a boil; stir in cornstarch mixture. Return to boil; cook and stir for 2 min or untill thickened. Serve over ribs.
FRI~ Chicken Fingers (usually have a crock-pot night or something easy due to Miss A's scouts)
Ritz crackers smashed up :)
mayo
chicken cut into slices
Pre-heat oven to 425 degrees
lightly coat chicken fingers in mayo and then coat in ritz crackers place on greased cooking pan. Cook for 20 min or until chicken is cooked all the wat through.
SAT~ Ratatouille
2 tbl olive oil
3 cloves garlic minced
2 tbl pars;ey
1 eggplant cut into circles
2 zucchinis cut into circles
1 large onion
2C sliced mushrooms
1 green pepper
salt to taste
2 large tomatos
1 cup parmesan
Pre-heat oven to 350 degrees, coat bottom of pan with 1 tbs olive oil. Heat remaining olive oil in medium skillit over medium heat. Saute garlic until light brown. Mix in parsley and eggplant. Saute until eggplant is soft, about 10 min. Season with salt. Sperad eggplant mixture evenly across dish. Sprinkle with parmesan. Spread zucchini in a layer, salt and sprinkle with parmesan. Layer with oion and mushrooms, bell peppers and tomaros, covering each layer with salt and cheese. Bake for 45 min.
SUN~ Sweet-n-Sour chicken wings with potato salad
Chicken Wings:
1 C sugar
1 C cider vinegar
1/2 C ketchup
2 tbl soy sauce
1 tsp chicken bouillon granuals
1/2 C water
6 tab cornstarch
In small saucepan combine the first 5 ing. Bring to a boil; cook and stir until sugar is dissolved. Place chicke wings in slow cooker; add vinegar mixture. Cover and cook 3-4 hours or until chicken juices run clear.
Transfer wings to serving dish and keep warm. Skim fat from cooking juices and transfer to saucepan. Bring liquid to boil. Combine cornstarch and water until smooth. Gradually stir into saucepan. Bring to a boil; cook and stir for 2 min. Spoon over chicken.
Potato Salad:
3 lb potatos, boiled
4 hard boiled eggs
4 tbs mayo
2 tbs sweet relish
1 tsp mustard
1/4 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1/4 tsp parsley
Boil potatos until slightly soft, cut into cubes. Crumble hard boiled eggs over potatos and mix in all other ing.
